Sago pudding

Ingredients:
1 pint of milk
2 oz Tesco sago
1 oz sugar

Method
  1. Heat the milk in a pan and sprinkle on the sago
  2. Bring the mixture to the boil. Then simmer gently for 15 minutes, stirring frequently.
  3. Remove from the heat, stir in the sugar and serve.
Alternatively (to brown) turn into an ovenproof dish, dot the surface with butter, and bake at the top of a preheated oven for 30 minutes at 200ºC, 400ºF or gas mark 6.

Also good served cold with fruit.

This recipe is the one we have always used. It works well with what was once "Tesco Sago" but I am pretty sure no such thing exists now. Of late it has seemed to me that it needs a little more sago than is specified here: possibly the sago I have is smaller sized. But twice as much is definitely too much.



Also beware of cheap third world sago that has been adulterated with dust or flour or has had weevils or something, in which case you get a kind of sludge, not lovely transparent globules.
